Hi friends! It’s spring – the official season of brunch, right? Brunch might be my most favorite meal in the world because well, I love breakfast but since I’m “a night owl” I also enjoy sleeping in. So eating breakfast later in the day is like a dream come true. Easy breakfast casseroles are also super popular to make for the holidays. Easter is coming up and I can’t think of an easier or more delicious way to start the holiday than with this Easy Blueberry Danish Breakfast Casserole!
How to Make a Danish Breakfast Casserole
You’re going to start with large croissants like the ones you find at Sam’s Club or Costco! We love buying the pick packages of them but you know at the end when they’re kind of stale and you have 3-4 left, that’s when it’s a perfect time to make this easy breakfast casserole!
Just chop those croissants up into about 1-inch pieces and toss them in your casserole dish. Cover the croissant pieces with fresh blueberries and you’re already half way there!
Then with a mixer combine your cream cheese, sugar, vanilla, milk and eggs into one delicious mixture that mimics what you’d find in a delicious cream cheese danish – are you feeling me? This is going to be good! Once all smooth and combined, simply pour that mixture over your croissants and blueberries.
Now you’re going to let that mixture sit and soak in for 10-20 minutes. Now you can preheat your oven to 350 degrees and get ready to bake that goodness. Once it’s ready to go in, simply pop your casserole dish in the oven and bake at 350 degrees for about 30 minutes or until the top is toasty and golden!

Easy Blueberry Danish Breakfast Casserole Recipe
A breakfast casserole made with croissants, cream cheese and fresh blueberries, this Easy Blueberry Danish Breakfast Casserole will be the hit with your family and guests at your next brunch!
Ingredients
- 1 cup Fresh Blueberries ripe
- 2 Large Eggs
- 2/3 cup Sugar
- 1 tsp Vanilla
- 3-4 Large Croissants
- 8 oz Cream Cheese softened
- 1 cup Milk
Instructions

Cut up the croissants into 1-inch cubes and spread in a casserole dish.

Sprinkle the fresh blueberries on top of the croissants.

With a mixer in a medium bowl, combine the cream cheese and sugar.

Add the milk, vanilla and eggs to the cream cheese mixture and beat until combined.

Pour the cream cheese mixture over the croissants and wait about 10-20 minutes for mixture to soak into the bread.

Preheat your oven to 350 degrees.

Put casserole dish in the oven and bake at 350 degrees for about 30 minutes or until golden.
