Trader Joe’s Pancake Bread Recipe
Hi friends! Phew it’s been a crazy couple of weeks hasn’t it? I don’t know about you, but I’ve certainly upped the amount of baking we’ve been doing in the house. Especially while some things are in short supply (ie, bread), it’s been fun to try out new quick bread recipes and this one is no exception!
Pancake Bread from Trader Joe’s
Are you a Trader Joe’s fan? I don’t live close by, so when I go I’m sure to stock up on my favorites! And one of those is their delicious pancake bread: a twist on a buttermilk short stack, baked into a sweet, moist loaf. It’s so good but when I can’t get to the store I needed a copycat pancake bread recipe so I could whip up this goodness from home.
Pancake Bread Ingredients
No crazy ingredients here…thankfully, you might have quite a few of these in your fridge and pantry already!
- Flour
- Baking soda
- Baking powder
- Kosher salt
- Unsalted sweet cream butter
- Sugar
- Large eggs
- Pure maple syrup
- Sour cream
- Pure vanilla extract
- Ground cinnamon
How to Make Trader Joe’s Pancake Bread
Preheat oven to 350 degrees and spray a 9×5 glass loaf pan with pam baking spray, set aside. In a small bowl, whisk together the topping ingredients and set aside. In a medium bowl, whisk together the flour, baking soda, baking powder and salt until combined. Using a standing mixer, beat together the butter and sugar until combined, and smooth and creamy. Beat in eggs, one at a time, until combined. Mix in the maple syrup, sour cream and vanilla. Gradually mix in the dry ingredients until combined and smooth. Pour batter into the loaf pan. Sprinkle the topping ingredients onto the top of the batter. Bake in the oven for 55-65 minutes or until a toothpick comes out clean. Allow to cool completely before removing from pan and enjoying!

- 1/2 C unsalted sweet cream butter softened
- 1 C sugar
- 2 large eggs
- 1/2 C pure maple syrup
- 1 C full fat sour cream
- 1 tsp pure vanilla extract
Topping Ingredients
- 2 tbsp sugar
- 1 tsp flour
- 1 tsp ground cinnamon
