This Chile Egg Puff Casserole is easy, delicious and perfect for brunch!
The recipe couldn’t be more simple, whip up some eggs, add in some flour, baking soda, salt, cottage cheese, shredded cheese, butter and canned chilies and pop it into an oven for 45 minutes and you’re ready to go!
Chile Egg Puff Casserole
Ingredients
- 10 eggs
- 1/2 cup flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 cups cottage cheese
- 1 1/2 cups shredded monterey jack cheese
- 1/2 cup melted butter
- 8 oz canned chilies
Instructions

Preheat oven to 350 degrees.

In a large bowl, beat eggs then add in flour, baking soda and salt.

Once combined add in cottage cheese and shredded cheese.

Add melted butter and chilies.

Pour mixture into a greased 13x9 casserole baking dish.

Bake for 40-45 minutes or until center is firm.
