This Chile Egg Puff Casserole is easy, delicious and perfect for brunch!

Ingredients

  • 10 eggs
  • 1/2 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 cups cottage cheese
  • 1 1/2 cups shredded monterey jack cheese
  • 1/2 cup melted butter
  • 8 oz canned chilies

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, beat eggs then add in flour, baking soda and salt.
  3. Once combined add in cottage cheese and shredded cheese.
  4. Add melted butter and chilies.
  5. Pour mixture into a greased 13x9 casserole baking dish.
  6. Bake for 40-45 minutes or until center is firm.
