Hi friends! We’re on a bit of a breakfast kick lately. I love a good breakfast recipe, especially if it can be made ahead of time. Enter: our Blueberry Almond Oatmeal Cups! There’s really nothing better than the combo of oatmeal, nuts and fresh fruit to kick off your morning routine.
Blueberry Almond Oatmeal Cup Ingredients
Just some oatmeal, almonds, fruit and some baking ingredients and you have yourself the means to a delicious and easy breakfast or snack.
- Old Fashioned Oats
- Sliced Almonds
- Baking Powder
- Salt
- Ground Cinnamon
- Egg
- Vegetable Oil
- Milk
- Pure Maple Syrup
- Pure Vanilla Extract
- Banana
- Blueberries
- Nonstick Cooking Spray
How to Make Oatmeal Breakfast Cups
Preheat the oven to 350 degrees. Grease a muffin pan with nonstick cooking spray. In a large bowl, combine the oats, almonds, baking powder, salt and cinnamon. In a smaller bowl, combine the egg, milk, vegetable oil, maple syrup, and vanilla extract.
Add the wet ingredients to the dry ingredients, mix it all together, and add in the banana. Gently stir in blueberries.
Pour mixture into muffin pans and bake for 23-25 minutes until golden brown.
Let cool, serve, and enjoy!
