Blueberry Almond Oatmeal Cups

Servings 6 cups

Ingredients

  • 2 cups old fashioned oats
  • 1/2 cup sliced almonds
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 egg
  • 2 tablespoons vegetable oil
  • 1 cup milk
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons pure maple syrup
  • 1 banana
  • 1 cup blueberries fresh or frozen

Instructions

  1. Preheat the oven to 350 degrees.
  2. Grease a muffin pan with nonstick cooking spray.
  3. In a large bowl, combine the oats, almonds, baking powder, salt and cinnamon.
  4. In a smaller bowl, combine the egg, milk, vegetable oil, maple syrup, and vanilla extract.
  5. Add the wet ingredients to the dry ingredients, mix it all together, and add in the banana.
  6. Gently stir in blueberries.
  7. Pour mixture into muffin pans and bake for 23-25 minutes until golden brown.
  8. Let cool, serve, and enjoy!
