Hi friends! If you follow me on Instagram, you may already know that one of our family resolutions for the month is zero fast food and for the year to significantly cut back on how much we eat out. Now that may sound simple to some, but as a working mom with a lot of plates spinning, meal planning is not top on my list. But I still want to make the effort to make quick and healthy meals at home. So what’s my solution? eMeals.

And our family does love it! And to show you why, today I’m sharing one of our favorite eMeals recipes with you – Santa Fe Soup.

Santa Fe Soup
Ingredients
- 1 lb ground beef cooked
- 3 - 14 oz cans diced tomatoes undrained
- 1 - 14 oz can of red beans undrained
- 1 - 14 oz can of kidney beans undrained
- 1 - 14 oz can of corn drained
- 1 pkt taco seasoning
- 1 pkt ranch dip
- sour cream and cheese, optional
Instructions

In large soup pot combine all ingredients and heat thoroughly. Simmer 20 minutes.

Garnish soup with cheese and sour cream.

I would be interested in this emeals thing a little more after you’ve gotten a few weeks from it: do you like all of the meals they’re suggesting? Do you find you’re buying ingredients that can all be used together or are you wasting products (like if I bought an onion and only needed half of it, do they give you another recipe for the next night using the other half)? Are you finding there are enough recipes or do they circulate too frequently? Please say you’ll let us know how you like it and how useful it really is in another couple of months?!
