Even as a stay at home Mom, dinner time always feels like a rush at our house.  I try to use our slow cooker regularly to help minimize my time in the kitchen during “rush hour”.  I especially love slow cooker freezer meals that can be prepped ahead, frozen for later, and tossed in the slow cooker for a busy day.

I made this BBQ chicken a few weeks ago and shredded it over chips to make Slow Cooker BBQ Chicken Nachos.  It was a huge hit!  Even my picky eight-year-old gobbled it up.  I decided to make it again but this time use it for slider sandwiches.  I picked up a package of take and bake rolls from our grocery bakery and some frozen sweet potato fries to make this meal even easier.

This chicken shreds easily with a fork after cooking all day.  I recommend using a BBQ sauce that you love; my husband isn’t a huge fan of BBQ flavors but the chipotle sauce really balances the dish.  I recently discovered chipotle cheddar and it’s a perfect compliment to these sandwiches!
Chipotle Chicken BBQ Sandwiches

Ingredients
  • 2 chicken breast
  • ½ cup BBQ sauce
  • 2-3 tbsp Chipotle sauce (found in the Hispanic/Ethnic food section)
  • sandwich rolls
  • shredded cheese, optional
Instructions
  1. Place your chicken, BBQ sauce, and Chipotle sauce in the slow cooker on low for 4-6 hours.
  2. When fully cooked, shred with a fork (in the slow cooker, with all the juices).
  3. Fill each sandwich with chicken, top with cheese if desired.
