Kale Quinoa Salad
Ingredients
- 1 cup quinoa
- 1 1/2 cups water
- 1 cup kale leaves torn
- 1 cup blackberries
Dressing:
- 1/4 cup orange juice
- 2 tsp lemon juice
- 1 Tbsp honey
- 3 Tbsp olive oil
Instructions

Bring water to boil in a saucepan over medium heat. Add quinoa and return to a boil. Reduce heat to simmer and cook for 10 minutes.

Stir in kale and cook for 1 minute. Remove from heat, cover and let sit for 10 minutes.

In a small bowl, whisk together orange juice, lemon juice, honey and olive oil. Pour over quinoa mixture and stir well. Top with blackberries.
I love any recipe that only takes one pot to cook and is done in under 30 minutes. For me that is always a win. You can easily have this as a main dish salad or serve it alongside grilled chicken or fish.
