Easy Cucumber Salad
Ingredients
- 2 large cucumbers
- 1/2 medium red onion
- 1 cup water
- 1/2 cup white vinegar
- 1/4 cup sugar
- 1 tsp pepper
- 1 tsp salt
- 1/2 tsp dill
Instructions

Using your KitchenAid Spiralizer Attachment, spiralize your two large cucumbers and thinly slice half of a medium red onion.

In a small bowl, combine water, white vinegar, sugar, pepper, salt and dill. Stir to combine.

Toss cucumber spirals and onion slices in a large bowl and cover with dressing.

Store in airtight container and refrigerate.

Instead of pulling out the Kitchen Aid, why not invest in a little Inspiralizer to cut your veggies quickly and easily.

Good question, Pam! Our KitchenAid is always out on the counter, displayed proudly! So it makes much more sense for us to quickly grab the attachment and get to work, over buying a whole new kitchen gadget. 😉 We love it!

We have odles of veg from garden and this cucumber onion recipe looks great!! My question is this: How long can this salad last in the mason jars? Do you seel the containers in water bath? Thanks for your help!!!

Hi Lynne, while I think the salad is best after just a few hours of sitting in the brine, we did have some the next day and it was good too! It may just depend on taste!

I remember eating a salad like this when I was little but it had pieces of tomato in it too. Could this possibly be the same recipe? It sounds great.
