Unicorn Breakfast Bread


  • 1/2 C unsalted sweet cream butter softened
  • 1 C sugar
  • 2 large eggs
  • 3 large bananas mashed
  • 2 C flour
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • gel food coloring pink, purple and neon green
  • 1 C unicorn sprinkles

White icing:

  • 2 C powder sugar
  • 3 tbsp milk
  • 1/2 C unicorn sprinkles


  1. In a large mixing bowl, whisk together the flour, baking soda, and salt until combined

  2. Preheat oven to 350 degrees and spray a loaf pan with baking spray

  3. Using a standing mixer, beat together the sugar and butter until smooth and creamy

  4. Beat in the eggs, one at a time until combined after each eggs

  5. Mix in the mashed bananas

  6. Gradually mix in the dry ingredients until combined

  7. Divide the batter into 3 bowls: add a few drops of the pink gel food coloring into 1 bowl, add a few drops of the purple gel food coloring into the second bowl and add a few drops of the neon green gel food coloring into the third bowl

  8. Using the medium ice cream scoopers, scoop a few dollops of the pink batter into the loaf pan, scoop the purple colored batter into the loaf pan then sprinkle about 1/4 C of sprinkles onto the top of the two colors

  9. Mix in 1/4 C of sprinkles into the neon green batter then scoop the neon green batter onto the top of the other two colored batters

  10. Bake in the oven for 45-65 minutes or until a toothpick comes out clean

  11. Sprinkle the remaining sprinkles onto the top of the batter

  12. Remove from oven and allow to cool completely

  13. Remove loaf from pan and place onto a wire rack

  14. Using a large mixing bowl, whisk together the sugar and milk until combined and smooth

  15. Pour over the loaf

  16. Sprinkle some unicorn sprinkles on top

  17. Allow icing to harden before slicing
