Pistachio Muffins

Ingredients

  • 2 cups flour
  • 3/4 cup brown sugar
  • 1/2 cup oats
  • 1/4 cup chopped pistachios
  • 1 T baking powder
  • 1/2 tsp salt
  • 3/4 cup milk
  • 1/2 cup mashed ripe banana
  • 1/2 cup canola oil
  • 1 egg

Instructions

  1. Mix flour, sugar, oats, pistachios, baking powder and salt in a large mixing bowl.
  2. Add in milk, mashed banana, oil and egg.
  3. Stir lightly - don't overmix.
  4. Spoon batter into lined muffin pans and bake at 400 for 18-20 minutes.
  5. Cool and enjoy!
