She says to “choose a healthy snack that tastes good and makes you feel good.” I know this is so important in our quest to be healthier this year! Making good decisions isn’t just about your main meals – but what you have in between! Valerie also coaches us to “fuel up with fiber.” I know that especially as we age (TMI?) that fiber is so very, VERY important to our health. Pistachios are a great source of fiber, providing 12 percent of the daily value per 30 gram serving!
Beyond snacking, pistachios are great in entrees and baked goods! Like these Pistachio Muffins…
Pistachio Muffins
Ingredients
- 2 cups flour
- 3/4 cup brown sugar
- 1/2 cup oats
- 1/4 cup chopped pistachios
- 1 T baking powder
- 1/2 tsp salt
- 3/4 cup milk
- 1/2 cup mashed ripe banana
- 1/2 cup canola oil
- 1 egg
Instructions

Mix flour, sugar, oats, pistachios, baking powder and salt in a large mixing bowl.

Add in milk, mashed banana, oil and egg.

Stir lightly - don't overmix.

Spoon batter into lined muffin pans and bake at 400 for 18-20 minutes.

Cool and enjoy!

Yum! My family loves pistachios. For my youngest’s last birthday I made pistachio cupcakes with an orange ricotta frosting, these seem like a much healthier alternative.
