Jumbo Blueberry Muffins - delicious and easy muffins that are perfect to feed a hungry family in the mornings!

Jumbo Blueberry Muffins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup fresh blueberries
  • 1/2 cup sugar optional

Instructions

  1. Preheat oven to 400 degrees. Grease muffin pan or line with muffin liners.
  2. Combine flour, 3/4 cup sugar, salt and baking powder in a small bowl.
  3. Combine vegetable oil, egg, and milk and mix into flour mixture.
  4. Gently fold in blueberries.
  5. Fill muffin cups almost completely to the top.
  6. Top with additional 1/2 cup sugar just before baking.
  7. Bake for 20 to 25 minutes in the preheated oven, or until done.

Recipe Notes

Fill any empty baking cups with 1-2 tbsp water (without a liner) for even baking.
