Easy Red Velvet Pancakes – an easy and delicious way to bring festive color into your brunch! Perfect for Valentine’s Day!
I have a confession, I am more of a waffle girl. Even at that, my version of waffles is sometimes Eggos (shh, don’t tell) and at most I whip up some Bisquick slap it on our vintage waffle iron and call it a day. So don’t be shocked when I tell you that these pancakes – to keep it in line with my pancake truth – starts with pancake mix. But I LOVE the idea of stepping up the pancake game like I did we these Easy Red Velvet Pancakes! PLUS they’re perfect for Valentine’s Day coming up! Bonus!
Easy Red Velvet Pancakes
Ingredients
- 2 cups pancake mix I used Bisquick
- 2 tbsp unsweetened cocoa powder
- 2 tbsp sugar
- 1 cup buttermilk
- 2 eggs
- 1 tbsp vanilla
- 1 tsp red food color or more as needed to reach desired red color
Instructions

In a large bowl, combine pancake mix, cocoa powder, sugar, buttermilk and eggs.

Whisk until well blended.

Add food coloring until your desired red color is achieved (we used about 1 tsp).

Pour 1/4 cup batter onto hot griddle.

Cook 2-3 minutes or until bubbles form on top and edges are dry.

Turn and cook the other side until pancake is done.
Now a lot of folks like to serve cream cheese topping with their red velvet pancakes, but we opted for a good quality syrup like you can find over at my friend Laura’s shop Finding Home Farms! The boys call this “mama’s syrup” because basically I’m the only one who’s allowed to use it. 😉
