Happy September! It is Shannah from Just Us Four back again! I hope you survived the summer and are looking forward to fall. We just started back to school which has led to some pretty crazy nights scrambling to get dinner on the table. Typically, we would order take out and everyone would breathe a sigh of relief. But, with the holidays approaching, we are trying to cut some of our spending and try to cook at home more often. Of course, that doesn’t mean I don’t crave my favorite Thai Pineapple Fried Rice from time to time. It just means that I learned to make it at home instead!
Thai fried rice is different from the Chinese version as it has a lot more curry to it than soy sauce flavors. I like mine a little bit spicy and loaded with extra vegetables like carrots. Making this take out favorite at home means I get to control the flavor intensity and get extra of my favorite ingredients too. My husband always sneaks a few extra slices of pineapple in his bowl.
Thai Pineapple Fried Rice
Ingredients
- 3 cups cooked white rice {preferably day old}
- 1 Tbsp oil
- 4 Tbsp vegetable broth
- 1/2 onion finely chopped
- 2 cloves garlic minced
- 1/2 tsp chili flakes
- 1-2 carrots sliced
- 1 egg
- 3 green onions chopped
- 1 1/2 cups pineapple chunks
- 2 tsp curry powder
- 2 1/2 Tbsp fish sauce
Instructions

In a small bowl, whisk together fish sauce and curry powder. Set aside.

Add oil to large wok or frying pan over medium-high heat. Add onions, garlic, and chili flakes, stir-frying until fragrant (1 minute). Add vegetable broth, 1 Tbsp at a time to pan as it becomes dry.

Add the carrot. Stir-fry 1 minute, adding more broth if needed.

Push ingredients to the side and add egg, stirring to cook.

Add rice, pineapple and pineapple pieces. Add fish sauce mixture and cook, stirring frequently, for 3-5 minutes. Remove from heat and top with green onion pieces.
