You guys! Did you see that? With the blink of an eye, Summer went BUH-BYE! GAH!
No more Strawberries and Cream Ice Cream Cake…or Mocha Latte Frozen Yogurt… That sounds depressing. I need to snap out of it!
However, I think I just found the remedy – I can officially start to bake everything-pumpkin! And be as obsessed with it as I want!! I already started last week with these Pumpkin Cupcakes with Maple Frosting. SO!GOOD! I then proceeded to make this Pumpkin Peanut Butter Dip with the rest of the canned pumpkin puree.
Basically, I just started to throw things into the blender and gave it a whirl. Seconds later I had one of the most delicious dips I have ever tasted. Honestly. My kids ate 4 apples with it. 4! In one sitting!! I mean, they were sugar-high and all, jumping off the walls, but still… they ate FOUR APPLES in one sitting! That, my friends, is HUGE… for us, at least. I think I might just puree all of their food from now, add in broccoli, pumpkin, sugar, and have them go at it.
By the ways, broccoli + pumpkin = eeeeewwww! I’ll serve that as punishment. buahahaha 🙂
Go to your pantry and pull out all-things fall; cinnamon, pumpkin, nutmeg, apples… and get your blender ready because you’re about to eat the BEST DIP EVERRRR! <—- In my head, I said that with a monsterish-echoing voice; I hope you heard it. 😉

Pumpkin Peanut Butter Dip
Ingredients
- 1 cup pumpkin puree NOT pumpkin pie filling
- 1 cup smooth peanut butter
- 1/2 cup sugar
- 1 tablespoon pure vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon nutmeg
- Apple Slices
Instructions

Add all ingredients (except apples) into a blender and blend until smooth.

Transfer dip to a serving bowl, cover with plastic wrap and refrigerate for 30 minutes.

Remove from fridge and serve with apple slices.

I am so grateful to find recipes that do NOT use tinned pumpkin! That isn’t available outside the US, or at least not very easily at all. But pumpkin puree is easy! Thank you!

Love this dip! have made it several times this fall for different groups of friends. It is healthier than the pumpkin dip I used to make with cream cheese and powdered sugar. I use natural creamy peanut butter. And I just mix it up with my hand mixer. Delicious!
