

Easy Pizookie "Pizza Cookie"
Adapted from Nestle Chocolate Chip Recipe.
Prep Time 20 minutes
Cook Time 18 minutes
Total Time 38 minutes
Servings 4
Ingredients
- 2 1/4 cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. salt I use sea salt
- 1 cup 2 sticks butter or margarine, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 tsp. vanilla extract
- 2 large eggs
- 1 cup chocolate chips
- 2 cups vanilla ice cream
Instructions

Preheat the oven to 375 degrees.

Mix flour, baking soda, and salt in a small bowl.

Cream together butter, granulated sugar, brown sugar and vanilla extract in large bowl with hand or stand mixer.

Add eggs and beat until well mixed.

Add in flour mixture slowly until completely blended.

Here I add dough to 1 pt sized Pyrex baking dishes, which work perfectly for the pizookie. You can also use small cast iron or other glass baking dishes. This size dish yields 4 servings.

Since my husband likes white chocolate and I like milk chocolate, I then add chocolate chips to the top of the dough. You could always incorporate them into the dough first if that is what you prefer.

Bake the pizookies at 375 until golden brown around the edges, approximately 18 minutes.

Remove from the oven; the center will be somewhat mushy still, but perfect for a pizookie!

Serve with a scoop of ice cream on top and you're good to go!

I use this recipe all the time, but I incorporate the chips into the batter, and then spread it in a greased 15 x 10 x 1 pan, bake it for 18 min at 375 and call it chocolate chip cookie bars.
I’m amazed that all of that dough will fit in a pint size dish do you really have it pressed down in there pretty compactly?…..It looks good! I will have to try it.

I think you mean QUART sized dishes…NO WAY this is fitting in a pint sized dish. Trust me…I just doubled this recipe…:(
I’m sorry Deb! I only use enough dough to fill the pint sized dishes 2/3 of the way full. You don’t have to use all the dough called for in the recipe. 😉 The recipe serves 4.
I came from SoCal, and I’m now on the East coast. Sadly there are no Pizookies here. Some places try, but none are as good as BJ’s. I NEEDed a Pizookie one day though, and found your blog.
I used 1/2 of your recipe with a few extra chocolate chips. I used milk chocolate, and I didn’t have any brown sugar, so it turned out more like a chocolate-chip sugar cookie, lol, but OMG THIS THING IS AMAZING!!! I will have to say: It’s as good as BJ’s Pizookie, if not BETTER!!! Mint chip ice cream made it awesome too!

Ooooh I don’t offhand Paige, but that sounds like a great one to try!
A 6.5 inch Cast Iron Skillet (Lodge makes one) would be perfect – they hold a little over 2 cups.
Note that the recipe makes 4 servings, so one would need 4 skillets or baking dishes for the full recipe. I don’t think this was made clear in the writeup.

Good question, John! I would think so – you would just have to watch for doneness as I’m sure it would affect cooking time!
