Instant Pot Chicken Tortilla Soup

Hi friends! Hello, fall! I’m so glad that October is here and cooler nights are in order. For us that means that our favorite soup recipes make their way back into the rotation! And it’s a good thing because as we welcome fall weather, we also say hello to colds! That’s why our friends at Safeway and Albertsons remind us to stay nourished and healthy this cold season with Signature Care™ and O Organics®. So we headed to our local Safeway to pick up the O Organics products we needed for some comforting and wholesome Chicken Tortilla Soup and our favorite Signature Care products for cold season relief.

With just a few of our favorite O Organics products and the help of a handy Instant Pot, you can have a comforting meal on the table in just 30 minutes!

To make this easy Chicken Tortilla Soup, set your Instant Pot to saute and add olive oil and chopped onion. Once the onion is translucent, add your spices and garlic. Stir to combine and cook for a minute or so, then add a jar of O Organics Medium Chunky Salsa, 1 cup of O Organics Golden Cut Corn and 1 can of Black Beans (drained).

Now it’s time to add the chicken. We added about 1.5 lbs of seasoned boneless, skinless chicken breasts (approximately 4 thin cut breasts) on top of the rest of the ingredients – don’t stir. Top everything with 4 cups of O Organics Chicken Broth.

Add your lid to the Instant Pot and set it to Manual for 12 minutes. Now since the pot will be more than half way full, it will take about 15 minutes to come up to pressure before it begins to count down. Once the 12 minutes is up, let it naturally release for about 5-10 minutes, then quick release the rest.

At this point, move the chicken breasts (which will be fully cooked and fork-tender) to a separate mixing bowl and shred with two forks. Add the shredded chicken back to the Instant Pot – and your soup is ready to serve!

Now like any true Chicken Tortilla Soup, you’re going to want to serve it up with a little O Organics White Cheddar Cheese, cilantro and a generous helping of O Organics White Corn Tortilla Chips!
