Hi friends! We’re continuing on with the Back to School Week theme with an easy after school snack (or in our house DINNER), these Easy Baked Corn Dog Bites! My kids LOVE LOVE LOVE corn dogs, do yours? I was never a fan until we started to introduce them now and then with our kids at home. We were buying frozen mini corn dogs from the store, but I knew there was likely a good recipe I could find for baked corn dogs to leverage for a fun at-home meal. I found said recipe at Martha Stewart (of course!)
The recipe is easy…

Easy Baked Corn Dog Bites
Ingredients
- 2-3 hot dogs cut into bites
- 1 1/2 cups flour
- 2/3 cups cornmeal
- 2 tsp baking powder
- 2 tsp sugar
- 2/3 cups milk
- 2 large eggs beaten
- 2 tsp vegetable oil
- Dash of salt and pepper
Instructions

Combine flour, cornmeal, baking powder, sugar, salt and pepper in large bowl.

Add in milk, eggs, and oil, mixing thoroughly.

Dust hot dog bites with flour, then cover with batter and place on a cookie sheet with parchment.

Bake at 375 for 20-25 minutes until tops of bites are golden.

Serve with ketchup and mustard dipping sauces and enjoy!
Easy but tasty! I mean, maybe not as good as the fried version. Let’s be honest. But when I told the boys we were having corn dogs (ensue excitement) and I gave them these, they ate EVERY LAST ONE.

I think that both of my kids would love these! Martha does have some exceptional recipes. I am glad she is venturing into simple things like corn dogs too haha! The last recipe I made of hers was an asparagus Gruyere tart. Polar opposites I think, but my fam would much prefer corn dogs!

Funny it’s like you read my mind. We tried a store bought frozen corn dog this evening for the first time, and my daughter did not like it one bit. This looks SO much better and I’m sure much more healthier then the store bought one and a fried version. I think we’re going to have to try take two on the corn dog meal!

Do you think these could be frozen and reheated in the oven?
Good question Jo, I’m not sure! There were a few that I overbaked that weren’t as good, so I’m not sure if reheating them in the oven would work too well. You could always try to make them and try freezing a few just to see how it works!
The thing to do is freeze them on the cookie sheet before baking them and then transfer them to an airtight storage container or freezer bag. You would then just pull them out and stick them in the oven and cook as usual. You may have to add an additional 1-5 minutes to the baking time but you can definitely make them ahead of time using this method.
