Hi friends! Cinco de Mayo is just around the corner and of course for our work festivities I had to bring a 7 Layer Dip. Yummm…is there anything better than beans, salsa, sour cream and cheese all stacked up and served as a yummy dip? I contend there is not. But if you noticed by the title, I prefer an “Almost” 7 Layer Dip. Why? Oh a little thing called having babies.
Having babies? What does that have to do with 7 Layer Dip? Well if you’ve had kids you know that your tastes can change after kids. Right? Please tell me it’s not just me. After my second I have had issues with tomatoes. Is that so weird? Not cooked tomatoes, not tomatoes in salsa or IN foods, but if I can avoid raw tomatoes added into food dishes I do. And since I made this almost 7 Layer Dip – I did just that, left the tomatoes out.
But don’t worry – I assure you that this almost 7 Layer Dip is packed with just as much flavor! And guess what, if you’re a tomato-lover we can still be friends and you can still add some on top. Then you have the full-fledged 7 Layers in all their glory. Sound good? Well, any which way you go, this stuff IS good. And just when I think this is such a simple recipe that EVERYONE must know how to make it, I have someone ask me how I made it. So I’m sharing.
I’m sharing HERE. Why? Because honestly this blog is also my digital recipe file. Seriously. I made our favorite Santa Fe Soup for dinner tonight and I still Googled the recipe on my own blog. Is that weird? Probably. Will I keep doing it? Definitely. Ok, now back to the recipe…
The Almost 7 Layer Dip
Ingredients
- 30 oz can refried beans
- 1 packet taco seasoning
- 8 oz chunky salsa
- 16 oz sour cream
- 2 cups shredded cheese
- 4 oz sliced black olives
- 1 bunch green onions
Instructions

In a small bowl, mix together refried beans and packet of taco seasoning.

In your casserole dish, smooth out the first layer of beans on the bottom.

Top the bean layer with your chunky salsa.

On top of the salsa, spread the sour cream.

Now add your shredded cheese on top of the sour cream, and sprinkle your green onions and black olives on top. Enjoy!
And there you have it! A gloriously tasty “Almost 7 Layer Dip!” Again you can make it the full 7 by adding some tomatoes, but who wants to go and do that? Ok, maybe you. I’m ok with that. So head out and grab the ingredients today along with a bag of tortilla chips – I guarantee you’ll eat it all. Happy snacking!

Kimberly, I love how you named this dip with that title! I’ve adapted to raw tomatoes (in tiny form), but cilantro changed my taste buds only during my last pregnancy. (Thank goodness it was only during!) So funny how having kids can do the weirdest things to us! Hope you’re enjoying your Sunday with your sweet family!

Your tastes DO change! I used to hate hate hate white milk, but now….I like it. Sometimes, nothing hits the spot like a spoonful of peanut butter and an ice cold glass of milk. Oh, and the tomato thing? My hubs can’t stand row tomatoes, he says they look like they aren’t finished inside.
