This Peanut Butter Skillet Cookie is easy to whip up and absolutely delicious served warm and topped with vanilla ice cream!

Servings 2 6oz skillet cookies
Ingredients
- 1 cup peanut butter creamy or chunky
- 1 cup granulated sugar
- 1 egg
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1 dash salt
- Ice cream optional
Instructions

Preheat oven to 350 degrees.

In a medium bowl, stir peanut butter and sugar together until smooth.

Add in the egg, then stir in the baking soda, salt and vanilla.

Add about half of the dough to your mini cast iron skillet or enough to fill the bottom half of the skillet you are using.

Add criss-cross marks in the top with a large fork or knife.

Bake for 15-20 minutes in the preheated oven or until cookie is done.

Serve warm topped with ice cream.
