Blueberry Banana Bread

Blueberry Banana Bread is the perfect breakfast snack to serve with your morning coffee or tea.

  • 4 tablespoons butter softened
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 2 bananas mashed
  • 1 cup all-purpose flour divided
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries


  1. Preheat oven to 325.
  2. Grease a 9x5-loaf pan with butter. Sprinkle with flour and set aside.
  3. In your mixer's bowl cream together butter and sugar; beat until smooth and creamy.
  4. Add egg and vanilla, and continue to beat until well incorporated.
  5. Using a rubber spatula, gently fold in mashed bananas and 1/2 cup flour. Set aside.
  6. In a separate bowl, with a whisk, combine remaining flour, cinnamon, baking soda, baking powder, and salt.
  7. Fold flour mixture into banana mixture until thoroughly combined.
  8. Gently fold in blueberries.
  9. Pour batter into prepared pan.
  10. Bake for 45 to 50 minutes, or until a toothpick inserted in the center comes out clean.
  11. Remove from oven and let cool.
  12. Invert onto a rack.
  13. Cut and serve.
