Easy Chicken Enchilada Soup

Ingredients

  • 3-4 skinless chicken breasts
  • 1 1/2 cups LA VICTORIA® brand Enchilada Sauce
  • 1 1/2 cups chicken broth
  • 1 can petite diced tomatoes
  • 1 can diced tomatoes with green chilies
  • 1 can black beans drained
  • 3 garlic cloves crushed
  • 1 tsp cumin
  • 1/2 tsp dried oregano
  • Sour cream cheese and green onions for optional garnish

Instructions

  1. Season and cook chicken breasts to taste; or shred rotisserie chicken.
  2. Combine chicken, enchilada sauce, chicken broth, tomatoes, black beans and spices in large pot and bring to a boil.
  3. Reduce heat and let soup simmer for 20 minutes.
  4. Serve warm, garnished with sour cream, cheese and green onions.
