Easy Cranberry Muffins

Easy and delicious cranberry filled muffins perfect for breakfast or a snack!

Ingredients

  • 1 ¼ cups sugar
  • ¼ cup softened butter or margarine
  • 2 eggs
  • ½ cup milk
  • 2 cups flour
  • 2 tsp. baking powder
  • ¼ tsp. salt
  • 2 cups cranberries
  • ½ cup nuts optional

Instructions

  1. Preheat oven to 350 degrees
  2. Cream together sugar and butter; add eggs one at a time, mixing well after each.
  3. In a separate bowl, stir together flour, baking powder and salt.
  4. Alternate adding the flour mixture and the milk to the butter and sugar.
  5. Add cranberries and gently mix with spoon.
  6. Add nuts (optional).
  7. Fill 12 paper lined muffin cups ¾ full.
  8. Bake 25-30 minutes or till golden brown.
