Green Chicken Enchilada Casserole

All of the great flavors of your favorite chicken enchiladas with a fraction of the fuss!

  • 2 cups cooked chicken shredded or cubed
  • 1 can green enchilada sauce
  • 1 can cream of chicken soup
  • 1/2 cup green verde tomatillo salsa
  • 1/2 cup sour cream
  • 2 cups shredded cheese
  • 12 corn tortillas


  1. In a large bowl, mix together chicken, enchilada sauce, cream of chicken soup, salsa, sour cream and 1 1/2 cup shredded cheese.
  2. Cut your corn tortillas into wedges and add to the large bowl. Mix well.
  3. Transfer mixture into a greased casserole dish and sprinkle with remaining cheese.
  4. Bake at 375 for 45 minutes or until cheese on top is golden and bubbly.
