Strawberry Waffles with Homemade Strawberry Whipped Cream

Ingredients

Strawberry Waffles

  • 2 cups strawberry quarters
  • 2 eggs
  • 2 cups flour
  • 1 1/2 cup milk
  • 1/2 cup butter melted
  • 2 tablespoons white sugar
  • 4 teaspoons baking powder
  • 1/4 teaspoon kosher salt
  • 2 teaspoons vanilla extract

Strawberry Whipped Cream

  • 1 pint heavy cream
  • 2 cups powdered sugar
  • 1 tablespoon strawberry puree

Instructions

  1. Preheat your waffle maker according to its instruction manual. While it is heating, prepare your batter.
  2. Add 1 cup of strawberries to your blender. Puree until smooth and liquid. *If making strawberry whipped cream, remove 1 tablespoon of strawberry puree and set aside.
  3. Add the eggs, butter, milk, and vanilla extract to the strawberries and blend until smooth. Add 1/2 the flour, sugar, salt and baking powder and blend until smooth. Add the remaining flour and blend until well mixed. Remove the lid and stir in the remaining 1 cup of strawberries.
  4. When your waffle maker is preheated, spray with cooking spray and begin making your waffles. Pour the batter into one corner and smooth into the other corners with a heat resistant spatula. Cook according to your waffle maker general instructions. I set mine to medium and it took 6-7 minutes until the steam was coming out the sides of the waffle maker. Remove waffles from waffle maker and set aside. Repeat until all waffles are made.
  5. To make the strawberry whipped cream, combine the heavy cream, powdered sugar and reserved strawberry puree in a stand mixer and whisk until well combined and the mixture is smooth. You can also whisk by hand.
