Stir fry makes a perfect weeknight meal. This lemon shrimp stir fry cooks in under 30 minutes and has a Paleo option too. Your whole family will love it.

Lemon Shrimp Stir Fry

Ingredients

  • 1 lb shrimp peeled and deveined
  • 1/2 onion finely diced
  • 2 garlic cloves minced
  • 2 Tbsp olive oil + 1 tsp divided
  • 1 Tbsp ghee butter will also work
  • 1 lb asparagus trimmed and cut into pieces
  • 1/4 cup lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp crushed red pepper
  • Rice or Cauliflower Rice for serving

Instructions

  1. Heat 2 Tbsp olive oil and 1 Tbsp ghee over medium heat in a pan. Add onion and saute for 2-3 minutes. Add garlic and saute for an additional minute. Add shrimp and cook for 1-2 minutes until they just start to turn turn color.
  2. Add remaining olive oil and asparagus to the pan. Cook, stirring frequently, for 4-6 minutes until shrimp are fully cooked and asparagus is bright green in color.
  3. Remove from heat and stir in lemon juice, lemon zest and crushed red pepper.
