Carrot Cake Oatmeal Lace Cookies

Ingredients

  • 1 cup butter
  • 2 eggs
  • 1 cup sugar
  • ½ cup brown sugar
  • 2 tsp. vanilla
  • 2 tbsp maple syrup
  • 3/4 cup grated carrots
  • 1½ cups flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • ½ tsp. cinnamon
  • 2 cups rolled oats

Instructions

  1. Beat butter, sugars, eggs, maple syrup, and vanilla until light and fluffy.
  2. Gently incorporate carrots.
  3. Add dry ingredients and blend well.
  4. Drop by teaspoonful on ungreased baking sheet.
  5. Bake at 375 for 6-8 minutes.

Recipe Notes

Chill the dough between baking batches.
