Ingredients

For the cake:

  • 1 box 16.5 oz. plain white cake mix
  • 1 pint 2 cups melted ice cream, any flavor
  • 3 large eggs

For the frosting:

  • 2 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 6 large marshmallows
  • 4 tbsp. butter
  • 1/3 cup milk
  • 1 tsp. vanilla extract
  • Sprinkles optional

Instructions

For the cake:

  1. Preheat oven to 350°F. Grease and flour a 12-cup Bundt pan or use Miracle Pan Release. Set aside.
  2. In a large bowl, combine the cake mix, melted ice cream and eggs with an electric mixer on low for 1 minute. Stop mixer and scrape down sides. Increase mixer speed to medium and beat an additional 2 minutes. Pour the batter into the prepared pan, smoothing out the top with a spatula.
  3. Bake for 38-42 minutes, or until the edges just start to pull away from the pan. Allow to cool on a wire rack for 15-20 minutes.
  4. Carefully place serving platter over the top of the cake pan and invert the cake onto the platter, removing from pan.

For the frosting:

  1. Sift the powdered sugar and cocoa into a medium bowl and set aside.
  2. Heat the marshmallows, butter and milk in a saucepan over low heat until marshmallows are melted. Remove the pan from the heat and stir in the powdered sugar mixture. Add the vanilla. Stir until the frosting is smooth and shiny. Use at once to top the cake. Top with sprinkles, if desired.
