Ingredients

  • 3-4 cups of roasted turkey chopped or 1lb of ground turkey, browned
  • 1 tbsp vegetable oil
  • 1 green bell pepper chopped
  • 1 red onion chopped
  • 4 garlic cloves minced
  • 2 cans 14.5 oz diced tomatoes, undrained
  • 1 can 16 oz kidney beans, rinsed and drained
  • 1 can 15 oz black beans, rinsed and drained
  • 1 can 14.5 oz chicken broth
  • 1 can 6 oz tomato paste
  • 2 cups frozen corn
  • 1 tbsp chili powder
  • 1/2 tsp pepper
  • 1/4 tsp ground cumin
  • 1/4 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Set your Instant Pot to Saute and add vegetable oil to the pot.
  2. Once the pot is hot and oil is simmering, add garlic, bell pepper and red onion.
  3. If you're using ground turkey now is the time to add it and cook on saute until browned.
  4. Cook until onion is starting to become translucent, then add seasonings.
  5. Turn the Instant Pot "off" of Saute.
  6. Scrape up any browned bits that have adhered to the bottom of the pot.
  7. If you're using leftover turkey now is the time to add it.
  8. Add chicken broth, corn, kidney and black beans to the pot and stir.
  9. Then add diced tomatoes and tomato paste ON TOP. Do not stir in.
  10. Then add your Instant Pot lid, make sure vent is set to seal and set your IP to 10 minutes on manual or 10 minutes of high pressure.
  11. Once time is up, let your Instant Pot naturally release for at least 10 minutes (you can quick release after that).
  12. Once released, open your Instant Pot, stir and enjoy your chili!
