Does your family like cookies? Yes? Well, then they are going to really love these Peanut Butter and Jelly Cookies! Made with creamy peanut butter {obvi!}, rolled in crunchy peanuts and topped with your favorite jelly, they are simply irresistible.
When my kids were little, they loved a good peanut butter and jelly sandwich. In fact, they preferred them over just about anything else. Now that they are older, turkey and cheese is the preferred, but these cookies are a great way for them to enjoy their long-time fave.
I always try to put some kind of treat in my kids’ school lunches, usually store bought, but, I really love when I am able to pack homemade cookies for them. There’s just something special about a homemade goodie from mom. They also make a really great after school or weekend snack, and I love the fact that the are packed with protein.
Peanut Butter and Jelly Cookies
Ingredients
- 1/2 teaspoon baking soda
- 1 Cup flour
- 1/2 Cup peanut butter
- 1/2 Cup butter softened
- 1/2 Cup granulated sugar
- 1/2 Cup light brown sugar packed
- 1 egg
- 1/2 teaspoon vanilla
- 1/2 teaspoon salt
- 1 Cup chopped peanuts
- Your favorite jelly
Instructions

Preheat oven to 350 degrees

In a medium bowl, combine flour and baking soda; set aside

In an electric mixer, cream peanut butter and butter

Add sugars; cream well

Add egg, vanilla and salt, mixing well

Gradually mix in flour mixture

Roll dough {it will be sticky} into 3/4-inch balls

Roll balls in chopped nuts and place 1-inch apart on greased cookie sheet

Press down center of each cookie with your thumb

Bake for 10 -15 minutes, or until slightly brown on edges

Cool slightly before transferring to cookie sheet to cool completely

Fill centers of cookies with your favorite jelly {I used peach}
