Hi! It’s Shannah from Just Us Four. I am so excited to be here sharing this recipe for Lemon Shrimp Stir Fry with you. Not only is it super quick and easy to make but it is also Paleo when you serve it over cauliflower rice like I did. Don’t worry though, it has so much flavor that everyone will think you’ve ordered take out from their local Chinese restaurant.
Stir fry recipes, especially ones with shrimp, make great weeknight meals because they cook so quickly. Who doesn’t want to get dinner on the table in under 30 minutes after a busy weekday?!
Lemon Shrimp Stir Fry
Ingredients
- 1 lb shrimp peeled and deveined
- 1/2 onion finely diced
- 2 garlic cloves minced
- 2 Tbsp olive oil + 1 tsp divided
- 1 Tbsp ghee butter will also work
- 1 lb asparagus trimmed and cut into pieces
- 1/4 cup lemon juice
- 1 tsp lemon zest
- 1/2 tsp crushed red pepper
- Rice or Cauliflower Rice for serving
Instructions

Heat 2 Tbsp olive oil and 1 Tbsp ghee over medium heat in a pan. Add onion and saute for 2-3 minutes. Add garlic and saute for an additional minute. Add shrimp and cook for 1-2 minutes until they just start to turn turn color.

Add remaining olive oil and asparagus to the pan. Cook, stirring frequently, for 4-6 minutes until shrimp are fully cooked and asparagus is bright green in color.

Remove from heat and stir in lemon juice, lemon zest and crushed red pepper.
My family asks for this Lemon Shrimp Stir Fry all the time and I am happy to make it. It takes almost no time until we are all sitting down to dinner and sharing about our day.
