Hi friends – today we’re talking about how this Easy Chicken Enchilada Casserole may have just changed the game. Everyday for me is crazy busy and I don’t know about you, but do you have these people who look at you every single night, their eyes saying “what’s for dinner – I’m hungry??” Yah, I have those people. Uggg sometimes I just dread the question because while I love the convenience of just picking something up, I always know there is something better for us (and cheaper for us) that I can make at home. But the fuss, the prep, the time? Just thinking about it is a little exhausting. Enter Kraft Recipe Makers.
It’s a game-changer folks. Kraft Recipe Makers are combinations of two savory sauces that along with your fresh ingredients make one of three fabulous dishes. And they’re easy. Simply add your fresh ingredients for a flavorful, homemade dish any night of the week. Can I get an amen? AND you can find Recipe Makers in seven delicious varieties at Safeway! I found my Recipe Makers in the “Meal Starters” Section. You know, the area by the soup that has things like skillet sauces. And if that isn’t easy enough, you can also choose from a variety of prep methods, including in a slow cooker, skillet or oven.
I have to be honest – I grabbed a few boxes. Even before I tried them! Please, an easy meal that is sure to be packed with flavor because of these sauces, sign me up! What we tried last night, and what I’m sharing with you today is the Verde Chicken Enchilada meal.
The Verde Chicken Enchilada meal comes with a Creamy Ranchero Filling Sauce and a Tomatillo Finishing Sauce. Yum! And there are simple instructions that come with the meal for making your very own Verde Chicken Enchiladas. But my laziness has no bounds. And what I did with this meal is what I do with all my enchilada meals – a casserole! Yup, an easy Chicken Enchilada Casserole!
The steps are simple!
Easy Chicken Enchilada Casserole Recipe
- Kraft Verde Chicken Enchilada Recipe Makers
- Kraft Mexican Shredded Cheese
- Shredded cooked chicken
- 8-10 corn tortillas
- Cut your corn tortillas into fourths and layer half on the bottom of a casserole dish.
- Cover the tortillas with one packet of tomatillo sauce and sprinkle with cheese.
- Mix together shredded chicken with ranchero sauce.
- Layer the chicken over the tortillas and cheese.
- Add another layer of tortilla quarters on top of chicken and sprinkle with cheese.
- Cover the top layer of tortillas with second packet of tomatillo sauce.
- Bake at 350 degrees for 30 minutes or until heated through.
So unbelievably delicious! Now I’ve made chicken enchiladas from scratch folks, but for just 10 minutes of prep and 30 minutes in the oven – I may never do that again. And the ULTIMATE litmus test? My husband and kids loved it! I mean, the box says serves 6 but we finished it all off. Each of my boys had seconds. And that’s the true test of yumminess, right?
