Brownie Ice Cream Sandwiches

Hello Friends!  What better way to celebrate summer than with ice cream…Blue Bunny Ice Cream! It’s hot, hot, hot but enjoying ice cream is a yummy tradition for summer time fun. So, if it’s with the family or entertaining friends, these Brownie Ice Cream Sandwiches are an easy and fun dessert.

Or, make it a PARTY; this would be a great group activity allowing everyone to create their own brownie ice cream sandwiches and see how creative everyone can be. All you need is to do is visit your local Walmart and pick up your choice of Blue Bunny Ice Cream, brownie mix, toppings and let the fun begin…

We stopped by our local Walmart to check out the Blue Bunny demo AND pick up all the goodies to make our Brownie Ice Cream Sandwiches! The main ingredient? We picked up delicious Blue Bunny Homemade Vanilla!

Once home, we spread out a carton of Blue Bunny Homemade Vanilla into a shallow pan until smooth and stuck in the freezer to re-freeze. Tip: right after bringing it home is a great time since ice cream is already softened! Also, you’ll want to let your pan of ice cream freeze for a good 24 hours so it’s nice and hard before serving!

Once the ice cream was ready, we baked a batch of brownies and once cool, cut them using a small square cookie cutter! You could also cut into small squares with a knife or use other fun shapes! Tip: once your brownies are cut, stick them into the freezer for at least 10 minutes for easier handling during sandwich assembly!

Once the brownies are ready, cut thick brownies in half, so you have a top and bottom for your ice cream sandwich. Then use the same cookie cutter to cut out squares of Blue Bunny Ice Cream! Simply sandwich the ice cream between your brownie and you’re half way there!

Next up – toppings! We had a variety of yummy toppings on hand, from sprinkles, to mini chocolate chips. Simply dip your edges into the toppings and you’re ready to roll!

Tip: If you’re not serving the sandwiches right away, be sure to store your Brownie Ice Cream Sandwiches in an airtight container in the freezer.
