Hi friends! Today I’m excited to not only bring you an easy and delicious and easy Peanut Butter Skillet Cookie recipe, but remember, each month on the 12th, 11 of my bloggy friends and I are bringing you a delicious and easy recipe, with a theme! And the theme this month is Dessert Recipes for Two, perfect for Valentine’s Day or any date night in!

Skillet cookies or “pizookies” are my jam. They have always been a favorite dessert of mine, and I gave you a glimpse into that with our Easy Pizookie and Grasshopper Pie Pizookie. There’s nothing like a warm cookie out of the oven and when you top it with ice cream? Amazing. I also love the portion size of a skillet cookie – I’m really one of the only ones who eats sweets in my home so goodness knows that I don’t need a dozen cookies laying around. And if you’re enjoying a nice dinner, a skillet cookie is also the perfect dessert for two, sharing a sweet from a cute little skillet!

My favorite place to pick up these mini cast iron skillets is at World Market. They’re perfect for individual desserts and they bake up cookies perfectly! Seriously, grab yourself a couple, you’ll get good use out of them! Then for our peanut butter batter it couldn’t get more deliciously simple – mix your peanut butter with sugar (creamy or chunky), add in your egg, baking soda, salt and vanilla and stir until combined! You don’t even need a fancy mixer with this cookie dough – which is also perfect for date night desserts! No major hassle here!

Then simply add about half the batter to your mini skillet and pop that in a 350 degree oven for about 15-20 minutes. Just check to see when the cookie is baked to your liking, pull it out, pop it on top of a potholder and top with ice cream and ENJOY!

Serves: 2 6oz skillet cookies
Ingredients
  • 1 cup peanut butter (creamy or chunky)
  • 1 cup granulated sugar
  • 1 egg
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 dash salt
  • Ice cream, optional
Instructions
  1. Preheat oven to 350 degrees.
  2. In a medium bowl, stir peanut butter and sugar together until smooth.
  3. Add in the egg, then stir in the baking soda, salt and vanilla.
  4. Add about half of the dough to your mini cast iron skillet or enough to fill the bottom half of the skillet you are using.
  5. Add criss-cross marks in the top with a large fork or knife.
  6. Bake for 15-20 minutes in the preheated oven or until cookie is done.
  7. Serve warm topped with ice cream.
