Hi friends! It’s back to the grind for many of us today – that dreaded Monday after the holidays. I don’t know about you, but especially with a newborn in tow, I’ve had to double up on my coffee routine today! And do you know what little treat pairs perfectly with my morning coffee? This delicious and easy to make Homemade Biscotti!

I’ve always been obsessed with biscotti, but because of a nut allergy I’ve had to avoid eating much of it. It’s such a bummer! But over the holidays my mother tried her hand at making Homemade Biscotti and I have to say, it turned out amazing!

Because she shares a similar nut allergy, these lovely breakfast biscuits were dipped in chocolate and chopped almonds – those are on the safe list! But really once you’ve mastered the basic biscotti dough, the sky is the limit on dipping combinations!

Ingredients
  • 2 cups flour
  • ¾ cup yellow corn meal
  • 1½ teaspoon baking powder
  • 1 teaspoon salt
  • 3 eggs
  • 1 cup sugar
  • 2 tablespoons orange zest
  • 2 cups chocolate milk chocolate chips
  • 1 cup chopped almonds
Instructions
  1. Preheat oven to 325 degrees.
  2. Line a large baking sheet with parchment paper.
  3. In a large bowl combine the flour, cornmeal, baking powder and salt.
  4. In another bowl beat the eggs and sugar until fluffy.
  5. Add the orange zest to the flour mixture.
  6. Add the flour mixture to the eggs and sugar and beat until blended.
  7. Allow the dough to stand for about 5 minutes.
  8. Turn the dough onto the prepared baking dish.
  9. Divide the dough in half and shape into two 11x4 inch logs.
  10. Bake for 30-35 minutes and allow to cool for a few minutes.
  11. Cut the logs into 1 inch diagonal slices.
  12. Place back on the baking sheet and bake for about 25 minutes.
  13. Allow to cool completely.
  14. Melt chocolate chips in a microwave bowl.
  15. Dip one cut side of the biscotti into the melted chocolate and chopped almonds.
  16. Place on a baking sheet and refrigerate until chocolate is firm.
