Hi friends! I’m so excited to share a new recipe we created with you today that is PERFECT for warmer months, our new No Bake Tiramisu Cheesecake! I’m a huge fan of tiramisu and last year we created an Easy Tiramisu Recipe that we’ve used over and over, but this time we mixed it up and made it even easier to make with a few twists that make it into a decadent cheesecake treat!

Now if you’ve been around these parts before, you know that we’re big fans of creating delicious coffee recipes with International Delight! And ID products are not only delicious in your everyday coffee, but they also make whipping up amazing coffee treats super easy! And today’s No Bake Tiramisu Cheesecake is no exception.

First, we whipped together International Delight’s Mocha Iced Coffee with marscapone cheese, cream cheese, sugar, rum extract and whipped topping for a delicious, creamy layer. Then we snagged some vanilla wafers and gave them a quick dunk in the iced coffee for the amazing cookie layers! You can of course use lady fingers for this step, but vanilla wafers are easier to come by, fit better in our cute mason jars AND are actually a staple in our pantry so it was a no brainer for this afternoon treat! Then we just alternated our creamy cheesecake layers with coffee cookie layers and topped with a little whipped cream and cocoa sprinkles.

Ingredients
For the Cheesecake Layers:
  • ¼ cup International Delight Mocha Iced Coffee
  • 4 oz. marscapone
  • 4 oz. cream cheese, softened
  • ¼ cup sugar
  • ¼ tsp imitation rum extract
  • 2 cups whipped topping
For the Cookie Layers:
  • ½ cup International Delight Mocha Iced Coffee
  • Vanilla wafers
For Garnish:
  • Whipped topping
  • Cocoa
Instructions
For the Cheesecake Layers:
  1. In a mixing bowl, beat together the International Delight Mocha Iced Coffee, marscapone, softened cream cheese, sugar and imitation rum.
  2. Once well combined, fold in the 2 cups of whipped topping with a spatula.
For the Cookie Layers:
  1. To assemble, add a cheesecake layer to your jar then dip 5-6 vanilla wafers in ½ cup of International Delight Mocha Iced Coffee.
  2. Layer the dipped cookies on top of your cheesecake layer and repeat until jars are filled.
To Serve:
  1. When you are ready to serve, top jars with whipped topping and sprinkle with cocoa.
  2. While these treats can be eaten immediately, they are best after being refrigerated for 1-2 hours. Enjoy!

      Hi Nicole, I’m sure you can use real rum I would just be sure to test out the consistency with the added liquid. You may need more whipped topping so that it is not runny. Hope that helps!
